I may have become temporarily fixated on rosemary. The sweet piney aroma just makes sense to me when trying to use it in a gin-based cocktail. “Under the Moon” was the result of a gin and rosemary love affair.

Staying true to a bramble style cocktail, I used a London dry gin, blackberry puree, rosemary simple and lemon juice. I cut through the sweetness by adding a pinch of Brut sparkling wine.

The result was a delicious marriage of sweet, tart and herbal. The concoction was intended for a wedding reception of a good friend of mine. The newly weds are outdoors enthusiasts and love all things camping, hiking, etc. The name “Under the Moon” was my shout-out to the lifestyle that they share while spinning off the age-old adage for being in love, “Over the Moon”.


“Under the Moon”

1.5 oz Beefeater Gin

0.75 oz fresh lemon juice

0.75 oz rosemary syrup (2:1 sugar to water)

0.50 oz blackberry puree (8:1 berries to sugar)

0.50 oz Brut sparkling wine

Combine all in a shaker (except sparkling wine) with ice and shake well. Add sparkling wine after shaking. Fine strain into chilled coupe glass. Garnish with a fresh rosemary sprig.
